Thanksgiving Recipe from Mazda of Manchester
Lisa Friedrich, Mazda Business Manager, has a favorite Thanksgiving dish, Tequila Pecan Pie. Please share yours.
“Ok, after I eat the turkey, mashed potatoes, stuffing, squash, turnips, green bean casserole, and corn offerings of a traditional Thanksgiving, I look forward to this dessert. Although, it may be borderline traditional, something I prefer not to be, it beats a pumpkin or apple pie!
TEQUILA PECAN PIE
1 Cup tequila-soaked raisins (do it right soak-em overnight)
1 Cup chopped pecans (also soaked to perfection)
1 Cup light brown sugar
¼ Cup white sugar
½ Cup butter
1 Tablespoon milk
1 Tablespoon all-purpose flour
1 ½ Teaspoons really good vanilla
Preheat oven to 350 degrees
Beat eggs until foamy, and stir in melted butter, flour and sugars
Add milk, nuts, and raisins
Pour into unbaked pie shell (I buy the ready-made, like I have time to make one) and bake for 30-40 minutes or until it smells good you have to rip it out of the oven. Just saying.
